Spring Pasta Salad

You’ll need: 2 teaspoons of Dijon mustard, 1 teaspoon of honey, 1/3 cup of extra-virgin olive oil, 1 clove of garlic (grated), 1 lemon (zested and juiced), salt, black pepper, 4 ounces of asparagus (thinly sliced), 1 box of frozen peas, 1 pint of grape tomatoes (halved), 1 shallot (minced), 12-ounce jar of roasted yellow peppers (chopped), 12 ounces of cavatappi pasta (cooked and shocked under cold water), and ricotta salata (for garnishing)

Step 1: Start by preparing the dressing. Take a small bowl and whisk together the Dijon mustard, garlic, honey, olive oil, lemon zest, and lemon juice. Season to taste with salt and pepper.

Step 2: Toss the cooked pasta with the peas, tomatoes, asparagus, roasted peppers, dill, and shallots. Then, pour the dressing over the salad. Toss once more to coat.

Step 3: Serve the pasta with shaved ricotta on top.

Spinach & Bacon Salad

You’ll need: 3 eggs, 7 slices of bacon, 1 package of white button mushrooms, 1 whole red onion, 3 tablespoons of red wine vinegar, 2 teaspoons of sugar, 1/2 teaspoon of Dijon mustard, 8 ounces of baby spinach (washed and dried), and a dash of salt

Step 1: Boil the eggs and fry the bacon. Be sure to place the eggs in cold water once they are done cooking. Also, drain and reserve the bacon fat for later use. Then, place the cooked bacon onto a napkin to remove as much fat as possible.

Step 2: Thinly slice the red onion and add it to the skillet. Then, cook the onions until they are caramelized. Once cooked completely, remove the onions and place them onto a plate.

Step 3: Slice the mushrooms to the size that pleases you and place them into the skillet. Cook until caramelized and brown. Then, place them onto a plate and set aside.

Step 4: Peel and slice the cooled eggs. Chop the bacon strips.

Dressing

Step 1: Add 3 tablespoons of the reserved bacon fat, sugar, vinegar, Dijon mustard, and salt to a small saucepan on medium-low heat. Whisk the ingredients together and heat thoroughly until the dressing is bubbly.

Step 2: Next, add the spinach to a large bowl with the onions, mushrooms, and bacon. Pour the hot salad dressing on top of the salad and toss to combine. After mixing, place the eggs on top and serve.

Lavender Cream Pie

You’ll need: 2 1/2 cups of heavy cream, 1/3 cup of lavender honey, 3/4 cup of whole milk, 2 teaspoons of dried lavender, 4 egg yolks, 1/4 cup plus 1 tablespoon of sugar, 1/4 teaspoon of Kosher salt, 9 honey graham crackers, 5 tablespoons of unsalted butter (melted), nonstick cooking spray, and purple coarse sugar (for garnishing)

Step 1: Start by preparing the ice cream. Take a saucepan and heat the milk, honey, heavy cream, dried lavender, 1/4 cup of granulated sugar, and a pinch of salt. Stir occasionally until hot (just before boiling). This should take about 5 minutes.

Step 2: In a separate bowl, whisk together the egg yolks. Then, slowly drizzle 1 cup of the hot cream mixture into the eggs, whisking constantly.

Step 3: After whisking the egg mixture, stir it into the saucepan with the remaining hot cream mixture. Then, cook the cream over medium heat. Be sure to stir with a wooden spoon until the custard is a little thickened. This should take about 8 minutes.

Step 4: Strain the cream into a bowl and discard the lavender.

Step 5: Take a large bowl and fill it halfway with ice water. Then, place the bowl of custard into the ice water and allow it to sit. Stir the custard occasionally until the custard is cold. This should take about 30 minutes.

Step 6: Preheat your oven to 375 degrees. While the oven is heating, take a 9-inch pie plate and generously coat it with cooking spray.

Step 7: Pulse the graham crackers, 1/4 teaspoon of salt, and the remaining 1 tablespoon of granulated sugar to create fine crumbles. Then, transfer the crumbles into a bowl and stir the melted butter in. Press the crumbs into the bottom of a pie plate and bake for about 10 minutes until lightly browned.

Step 8: Transfer the pie crust to a rack and allow it to cool.

Step 9: Pour the custard into an ice cream maker and freeze until it’s reached the consistency that you desire. Then, spread the frozen custard into the cooled crust. Sprinkle the purple coarse sugar over the pie and serve.
