The sun is out an the weather is nice this season. So, you’d better take advantage of the warm weather while you still have time – and we know the perfect way to do just that. Check out this extensive list of delicious warm weather recipes and prepare your taste buds for an experience to remember.

Grilled Chicken

The summer season is the ideal time to bring out the grill. So, this Grilled Chicken recipe is one that we definitely had to add to our list.

You’ll need: 4 boneless skinless chicken breasts, 4 slices of mozzarella, 3/4 cup of balsamic vinegar, 1 teaspoon of garlic powder, 2 tablespoons of honey, 2 tablespoons of extra-virgin olive oil, 2 teaspoons of Italian seasoning, 4 slices of tomato, 4 slices of avocado, Kosher salt, freshly ground black pepper, 2 tablespoons of freshly sliced basil (for garnishing), and Balsamic glaze (for drizzling)

Step 1: Grab a small bowl and whisk together the balsamic vinegar, honey, oil, Italian seasoning and garlic powder. Then, season to taste with salt and pepper. Once the sauce is mixed well, pour it over the chicken and allow the chicken to marinate for about 30 minutes.

Step 2: Meanwhile, heat your grill to medium high temperature. When the ideal temperature has been reached, grill the chicken until it is charred and thoroughly cooked. (A good estimate is about 8 minutes per side)

Step 3: When the chicken is cooked to your liking, top it off with mozzarella cheese, tomato and avocado. The, close the grill to allow the cheese to melt. (This should only take about 2 minutes)

Step 4: Garnish your delicious chicken with basil and a drizzle of balsamic glaze to amp up the flavor. Then, serve and enjoy!

Mediterranean Chickpea Salad

What better way to relax out in the summer sun than with a tasty salad by your side? Turn your warm weather menu up a notch with this Mediterranean Chickpea Salad!

You’ll need: 2 (15-oz.) cans of chickpeas (drained and rinsed), 1/2 cup of chopped kalamata olives, 1 bell pepper (chopped), 1 medium cucumber (chopped), 1/2 red onion (thinly sliced), 1/2 cup of crumbled feta, Kosher salt, and freshly ground black pepper

LEMON PARSLEY VINAIGRETTE: 1/2 cup of extra-virgin olive oil, 1/4 cup of white wine vinegar, 1 tablespoon of lemon juice, 1/4 teaspoon of red pepper flakes, 1 tablespoon of freshly chopped parsley, Kosher salt, and freshly ground black pepper

Step 1: Toss the chickpeas, olives, bell pepper, cucumber, red onion and feta cheese in a large bowl. Then, season with salt and pepper.

Step 2: Take a jar with a fitted lid and combine all of the Lemon Parsley Vinaigrette ingredients. Once combined, cover the jar with its lid and shake until emulsified. Afterward, season to taste with salt and pepper.

Step 3: Dress the salad with the delicious vinaigrette and serve.

Taco Lime Shrimp

You’ll need:1 lb. of medium shrimp (peeled and deveined), 1/4 cup of red enchilada sauce, 2 tablespoons of vegetable oil, the juice of 2-3 limes (and additional lime wedges for serving), 2 tablespoons of taco seasoning mix, 1 teaspoon of garlic powder, freshly ground black pepper, and freshly chopped cilantro (for garnishing)

Step 1: Preheat your oven to 400 degrees Fahrenheit.
Step 2: Place the shrimp on a large baking sheet and toss them with oil, salt, and pepper.

Step 3: Dress the salad with the delicious vinaigrette and serve.
